i can eat pineapple tart all day .. its my favourite too and its not just for lunar new year but also during eid in Malaysia :-D
and i remember making the tart once guided by my aunt .. we bake the filling which is on top of the dough and not separately. and you have to use the cookie cutter that has dent in the middle to hold the filling.
That dough looks a lot like pasta frolla, and from both the recipe and the description I think it's basically that 😁 loving the international pasta frolla!!

I'm from Malaysia. Pineapple tart is one of our main cookies. I use to watch n help a little my mom bake it. N it's easy. But now i'm thinking of making it by myself, i don't think it'll work the same. It never occurred to me to ask 4 the recipe. I think i want to noted it the next time my mom making it 😍😋

My mum use to sell pineapple tarts for all festive events. She makes like more than 10000 pieces each festive. I have never put sugar for the dough. Don’t have to make it complicated as the pineapple jam is already super sweet. 250g of butter, 1egg, a pinch of vanilli and flour just add in little by little until it is the right consistency.

Hi, I used to make pineapple tarts when I was a teen growing up in Singapore. Shortcrust pastry, add a bit of sugar. Add cloves to the pineapple jam and loads of sugar. Jam cooks for 3 hrs as it slowly caramalises. I had a traditional tart mould which you can't find any more these days.
